Spicy Lime Chili

My family loves chili. We have several different recipes we like to use. This lime turkey chili is one of my favorites! I know you are probably thinking, kale in chili??? This a great way to add some leafy green vegetables and it doesn’t take anything away from the chili. The bold flavors mask the kale very well, especially for a picky eater. This chili is also packed with protein!


Serves 6

3 lbs lean ground turkey

2 large jars of restaurant style salsa (medium heat)

¼ cup lime juice

2 cans black beans

1 bag of frozen sweet corn

1 bag of frozen, chopped kale

Chili lime seasoning to taste

Garlic powder to taste


In a large pot, cook ground turkey over medium heat, for about ten minutes. Season well with chili lime seasoning. Add 2 large jars of salsa and lime juice, stir well. Cover and simmer over medium heat for 45 minutes. Remove lid, add beans, corn and kale, stir well and let simmer for 10 more minutes. Stir and serve.
