This is a quick, easy dinner that is full of flavor! Each serving has about 35 grams of protein. This dish is packed with tomatoes. Tomatoes are rich in lycopene. Lycopene is a powerful antioxidant with many health benefits.
1 box Barilla Protein Penne Pasta
1 package of 5 Italian sausage links
2 tbsp olive oil
1 large can of Muir Glen whole peeled tomatoes
1 large can of Muir Glen crushed tomatoes
1 sweet onion, diced
5 garlic cloves, minced
1 tbsp dried basil
¼ cup red cooking wine
Splash of balsamic vinegar
Salt to taste
Cook the Italian sausage links as directed on the package and set aside.
Clean out the frying pan used for cooking the sausage and add olive oil to the skillet. Over medium heat, cook the onion and garlic until the onions are translucent. While cooking, cut up the Italian sausage.
Add red wine and balsamic vinegar. Bring to a simmer and continue to simmer for about 2-3 minutes. Add whole tomatoes to the skillet, carefully slice them in half or thirds. Add crushed tomatoes, basil and salt. Gently stir and then add the sausage back to the skillet. Cover with a splatter screen and bring to a gentle simmer. I usually reduce the heat to just below medium.
Cook the Penne pasta according to the package directions. Strain the pasta, DO NOT RINSE IT. Return the pasta to the pot used for cooking. Slowly pour the sausage and tomatoes into the pot. Stir and serve. This can be topped with Parmesan cheese but it isn’t necessary. This dish has a lot of flavor on it’s own.
