We spent many years watching The Biggest Loser. We loved that show! One night, they debuted loaded sweet potatoes as a healthy alternative to a classic loaded potato. I have never been a fan of classic loaded potatoes. I do love sweet potatoes and I definitely love tacos! This has been a huge hit in our house ever since we tried them. You can use a variety of toppings. I like to keep it lower in fat and as healthy as possible.
1 pound of lean ground meat (use the Quick, Easy Taco Meat recipe)
4 medium sized sweet potatoes (baked at 350 for approximately 1.5 hours)
Servings per potato as pictured
2 tbsp plain, zero fat Greek Yogurt
2-3 tbsp of salsa, any type is fine. (Peach Mango Salsa goes really well with this.)
1-2 tbsp of Bolthouse Cilantro Avocado salad dressing
Lettuce or cilantro for a garnish
After the sweet potatoes are out of the oven, cook the quick, easy taco meat. Carefully skin each sweet potato. These are hot, be careful. Slice into medallions and top with taco meat. Add toppings of your choice! Avocado, cheese, sour cream, hot sauce, anything you like on a taco can be used here. Sometimes, I add avocado and omit the salad dressing. It just depends on what I have available.
