Healthier Chicken Salad

Say hello to a healthier, super flavorful and delicious chicken salad. I love chicken salad. What I don't like is the high fat content. I avoid mayo based dishes. Seriously, summer gatherings can be hell for me. I always try to take a healthier version of a dish to most gatherings I am involved in. This is a winner!

Serves 6-8 people

2 lbs of cooked, shredded chicken breast

1 cup of red, seedless grapes, halved

1 ½ cups of non fat plain Greek yogurt

Fresh dill (as much as desired)

½ cup of low fat honey Dijon dressing

I seasoned my chicken with McCormick’s garlic and herb seasoning. Once seasoned, I cooked it in a skillet over medium heat with approximately two tablespoons of oil. After the chicken was cooked, it was set aside until cool enough to cut and shred.

Combine the chicken, yogurt and honey dijon dressing. Mix until well blended. Gently stir in grapes and dill. Cover and sit in the fridge for 2-4 hours before serving.

**Swapping the mayo with non fat Greek yogurt lowers the fat content to about 6 grams of fat per serving**
