I am so ready for Christmas morning! I always cook a large breakfast after the kids are done opening presents. It's my main meal for Christmas day. I usually do something something smaller for a late lunch, early dinner. In fact, this year, I am doing chicken salad croissants and pairing it with a green salad for our afternoon meal. My friend Julie, introduced me to some really good chicken salad at one of the local meat markets. In the evening I will put out a charcuterie board and we will watch our last Christmas movie for the season.
Here is my Christmas 2020 breakfast menu:
Quiche Lorraine - I usually only make this on Christmas and my guys really enjoy it! I make it the day ahead and reheat it on Christmas morning. When you make the quiche, let it cool and cover with aluminum foil. Store in the fridge. In the morning preheat the oven to 350 degrees, leave the foil on the quiche and reheat for about 30-40 minutes. (Recipe is linked through allrecipes.com)
Roasted Brussel Sprouts or Roasted Asparagus (I will make the decision once I see what the fresh produce looks like the week of Christmas)
Preheat the oven to 400.
Cut Brussels sprouts in half length wise, remove any wilted or brown leaves, rinse and pat dry. If using asparagus, use thin asparagus. Cut off the ends, rinse and pat dry.
Lay out in a single layer on a baking sheet, drizzle with olive oil, salt and pepper.
Roast in the oven for 15 minutes, stir and roast another 15 minutes.
