Buckwheat Noodle Soup Makes 6 servings

20oz of Korean style buckwheat noodles (The ones I buy have paper wrappings around a section of the noodles. Each wrapped section is approximately 5 ounces)

8 cups of beef, chicken or vegetable broth

3 tablespoons ginger paste

1/4 cup of lime juice

1/4 cup of liquid aminos or soy sauce

1 large bag of a fresh cabbage based stir fry mix (slaw mix will work too)

6 boiled eggs, peeled
